Hot Quinoa Cereal with Maple Syrup Apples

Ditch your usual cereal routine and try something new and healthier. Quinoa is packed with protein and other essential nutrients that you need to jumpstart your day. You will feel full longer, trust me!

Ingredients

2 cups diced Granny Smith apple
1/4 cup water
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash of ground cloves
2 cups water
2/3 cup quinoa flakes
1/8 teaspoon salt
2 tablespoons sugar
3 tablespoons pure maple syrup
2 tablespoons butter
1 teaspoon vanilla extract

Preparation

1. Combine apple and 1/4 cup water in a small skillet; bring to a boil. Stir in cinnamon, nutmeg, and cloves; cover, reduce heat, and simmer 4 minutes or just until crisp-tender. Remove from heat; uncover and let stand.

2. Bring 2 cups water to a boil in a large saucepan over high heat; stir in quinoa flakes and salt. Cook 1 1/2 minutes, stirring frequently. Remove from heat; stir in sugar, and let stand 5 minutes or until slightly thickened.

3. While cereal stands, return apple mixture to medium heat; add syrup, butter, and vanilla, stirring just until butter melts. Serve apple mixture over cereal.

Note:

Pure vanilla extract is made from distilled alcohol and flavor extracted from the vanilla seeds (artificial extract gets its vanilla flavor from artificial vanilla flavoring). The distillation process removes the gluten from the alcohol. This is true of other extracts too, such as almond and banana.

Quinoa Herb Meatloaf

You’ll need:

1 lb. lean ground beef
1/2 of a medium sized onion, minced
3/4 cup cooked Quinoa
1 large egg
1 tsp. fresh minced Rosemary
1 tsp. fresh minced Thyme
2 Tblsp. fresh minced Flat Leaf Italian Parsley
1 Tblsp. dried Celery leaves (or use fresh if you have it on hand)
1 cup grated cheddar cheese
Salt and pepper
3 Tblsp. sauce

Sauce: Mix in a small bowl

4 Tblsp. Ketchup
3 Tblsp. Mayonnaise
2 rounded tsp. Dijonmustard

Steps:

1.) Place the meat, onion, quinoa, egg, cheddar cheese, herbs, salt and pepper, and 3 Tblsp. of the sauce into a mixing bowl, and mix until incorporated.  I just use my hands, so the meat does not get too overworked.  Transfer to a casserole dish, shaping into a loaf.

2.) Spread the rest of the sauce all over the meatloaf.

3.) Bake in a 350 degree oven for 1 hour.
