Quinoa has the tendency to be annoyingly bitter if you don’t rinse it well. Although there are a lot of packaged quinoas that say no rinsing is required, I still rinse mine two or three times. There are different colors of quinoa available and the taste kind of corresponds to its color.

Yellow quinoa is reminiscent to couscous. It’s almost flavorless and the texture is somewhat similar to rice so yeah it’s pretty versatile and it absorbs every possible flavor you have in mind. I don’t have the perfect words to describe it but it’s like rice chopped into tiny pieces. Red quinoa on the other hand (which I think is the most popular) has that nutty, earthy flavor. It’s also crunchy. What about black quinoa? I’d say it definitely has a much stronger flavor than regular quinoa, a little toastier.
